Kimber is the founder of Sense, Spain's first bricks-and-mortar alcohol-free store. As well as physically selling to the public, they also sell online and fulfil distribution. 

She is a big fan of wine alternatives / wine occasion drinks. 'Selecting a drink that pairs perfectly with what I'm eating and sipping it slowly over dinner is my happy place,' she says. 

Since she lives in Spain, where the aperitivo hour is a big part of the culture, she's particularly looking forward to trying the vermouths and bitter aperitifs that come in to this year's competition. 

And who knows, since she's an amateur hand-balancer in her spare time (which she describes as 'circus-style handstands'), maybe a superlative aperitif flight will see her walking round the judging table on her hands in celebration!
