Along with his wife Karolina, Tomasz is the founder of Poland's first premium distributor and retailer of non-alcoholic drinks. Beztrosko (which means 'carefree') works with Poland's top sommeliers and mixologists to introduce a new mindful drinking culture to the country's gastronomy scene.

Tomasz himself is a big fan of wine proxies, indeed, any drink that, as he puts it, 'aims to create its own genre, rather than mimicking alcoholic drinks.' In his eyes, new concepts, flavours and techniques is what it's all about - the most exciting element of the AF category.

So it's perhaps no surprise that, during judging, he's most excited to get to grips with new non-alc spirits that take their inspiration from local flavours, ingredients and traditions. A self-confessed history nerd, he loves delving into the past outside the drinks' world, too and spends his free time watching documentaries about medieval warfare and reading books on 20th century urbanism.
